Hung is currently Executive Chef at a glatt kosher restaurant in New York. He had no clue about Kashruth and Jews before he was hired, so he's been getting quite the education. He did his first Passover food and brought a bunch of new twists to the traditional fare.

Good for him!! I really like to see a chef willing to go outside his comfort zone and learn.

Okay. This is Mother's only weigh-in on the Marcel debate. I believe I'm a disinterested (but not uninterested) party in this. I see Marcel as immature but not worthy of the contempt he drew (and draws). He is a prime example of Alexander Pope's warning that "A little knowledge is a dangerous thing; Drink deep, or taste not the Pierian spring." In other words, he'd gotten an idea about molecular gastronomy, but he never really made the connection between the gimmickry and old-fashioned idea of making food people want to eat.

I think he failed to see molecular gastronomy technique as a means to an end; rather, MG was, for him, an end in itself. I think Marcel is an amazing talent, and once he outgrows the "Gosh gee-whiz" aspect and the embarrassing attempts to display coolth by rapping, he will develop into a chef to be reckoned with. He probably just needs to get laid.

Hung—and even more so, Richard—understands the concept behind the experimental technique, and both, as a result, produce food to be eaten. I think Marcel will get there eventually—but not for a few years yet.

I never thought he was a GREAT chef..But he did make Michelle Bernstein's mouth sing and dance ...From what everyone says , Elia was the GREAT chef that season...But they all REALLY messed up a lot.... Darlin'...after TC methinks Marcel is gettin' laid a whole lot.

I can't find the pic of him and sexy Vegas girl..But how can anyone deny his charm and je ne se qua this night????? He was delightful that night.......Sigh

But there's a big problem with white rice. The majority of the nutrients in the rice kernel are in the layers that are removed. What's left is mostly starch. As refined rice is 81%-83% carbohydrates, it's considered a high energy food. But on the flip side of this, many of the nutrients needed for correct digestion of white rice were removed during the milling process which forces the body to 'steal' from it's reserves to digest it. Compared to brown rice, white rice's nutrients have been greatly reduced in fatty acids, fiber (which is already low in brown rice compared to some of the other grains), vitamin E, thiamin, riboflavin, niacin, vitamin B6, folacin, potassium, phosphorus, magnesium, iron, zinc and copper. The amino acids remain relatively unchanged.

Because of the importance of consuming proteins that provide all of the necessary amino acids, dietary proteins are considered to belong to two different groups, depending on the amino acids they provide. Complete proteins, which constitute the first group, contain ample amounts of all of the essential amino acids. These proteins are found in meat, fish, poultry, cheese, eggs, and milk. Incomplete proteins, which constitute the second group, contain only some of the essential amino acids. These proteins are found in a variety of foods, including grains, legumes, and leafy green vegetables.

Although it is important to consume the full range of amino acids, both essential and nonessential, it is not necessary to get them from meat, fish, poultry, and other complete-protein foods. In fact, because of their high fat content-as well as the use of antibiotics and other chemicals in the raising of poultry and cattle-most of those foods should be eaten in moderation. Fortunately, the dietary strategy called mutual supplementation enables you to combine partial-protein foods to make complementary protein-proteins that supply adequate amounts of all the essential amino acids. For instance, although beans and brown rice are both quite rich in protein, each lacks one or more of the necessary amino acids. However, when you combine beans and brown rice with each other, or when you combine either one with any of a number of protein-rich foods, you form a complete protein that is a high-quality substitute for meat.

So, once again, all he had to do was add a few beans and he would have been fine. He made up for some of the vitamins and minerals stripped from the rice by using sweet potatoes.

In fairness, I was able to find a producer of white rice that claims that rice has all 8 essential amino acids. Which is fine except that there are, for all practical purposes 10 (two have been added to the list of necessary amino acids, one of which is considered "essential" for children). And rice is seriously lacking in at least two of the "classical 8") amino acids. Remember that you have to not only have the amino acids present, but you have to have sufficient quantities to be useful.

That's why you add legumes or meat proteins to "round out" the protein in rice, and why you need a source of vitamins and minerals (like the sweet potato) to fill in what milling takes away in the case of white rice.

Finally, the percentage is protein vs. caloric content of white rice is far lower than for most beans. So, while there's protein present, it's not of the quantity that you'll find in other forms of protein. That's why you find in rice eating cultures that they combine rice with meat or bean proteins. They don't generally just eat rice with veggies. India is a good example. They have their share of vegetarians, and they don't put beans in their curries generally. But they serve their lentils and such as a side dish. And beans by themselves aren't "a complete meal" either, even when combined with something as "nutritious" as sweet potatoes or other veggies. It's only nutritious up to a point.

Just having all 8 "classically essential" amino acids doesn't make a food a complete meal either. Milk has all 8 of them as well (as does a nice thick ribeye steak). But no one says that a glass of milk is a "nutritious meal", even though it's chock-a-block full of vitamins and minerals as well. The key word is "balanced".

Well we don't know what kind of rice he used. And remember the Coconut milk, Squash and Sweet Potato all bring some protien to the table as well.

Season 2 may have been the overall "Season of Bad Behavior," if you are looking at the large number of cheftestants who exhibited pathetically bad behavior at least once.

But Season 4 is certainly giving S2 a run for the money in this regards. There may not be as many rude, obnoxious, arrogant characters as there were in S2. However, the S4 bad-behavior chefs that are still there (or who have, thankfully, already been eliminated) are just as bad as anyone in S2 or any other season. Frankly, Lisa, on her own, is more contemptuous and irritating than all the jerks in S2 combined.

Lisa may be more of a massive pain in the ass than all of the jerks in reality TV combined.

If you're talking about him snapping at Betty, I don't think either of them was in the wrong--Betty didn't hear the production crew telling them to wait, and assumed Marcel was "snapping" at her when he called her to stop. But the fact that every other chef sided with her should tell you all you need to know about how he'd been dealing with them up until that point.

Thanks for the welcome KK. You know, he looks a little like one of the Home Owner Association gardeners who works around here. Now I'm going to look funny at him when he makes a comment about trimming my wife's bush.

At present I'm not working at all. I'm taking on-line courses in computer programing and raising my son, Ian. It's a job, I just don't get paid for it. I do bring in money by making designs for the silk screener my brother-in-law works for. Here's one I did.




I did work at several restaurants when I was single. I worked as a sous chef at this little Italian place called Marcello's in Riverdive, CA back many years ago. It's long since gone. The owner died and the family closed the business and now there is some guy who sells lawnmowers in that building now. I also worked at Red Lobster, (Rock Lobster as I use to call it.), and Cask N' Cleaver-also of Riverdive and a place in the Cleveland flats called D!ck's. I've also "whored" myself when desperate for cash. Ever fast food joint from Arby's down to Wendy's it seems like.

The last food related job I had was at Pizza Hut. I was there for almost five years. I was a store manager though. Then I got hired on by a retail place, (Walden Books), and left food for good. I don't think I'd ever go back either. I'm an old man of 35 now and that phase of life has long past me. I do have the idea to open my own place one day. I love pizza and would like to open a Pizza 80's thing. Make it the way pizza places use to be cir. 1981. Lots of classic arcade games for the kids like Ms. Pac-Man and Donkey Kong. Have classic comedy entertainment like Laurel & Hardy or The Three Stooges. Have a separate bar-n-grill type for the adults with pool tables, pinball and a stage for music shows. And all the gratis popcorn and in-shell peanuts you could want. Just a little dream of mine.

Anyways, Happy Cinco De Mayo back at you. I've got a chuck roast in my slow cooker for some shredded beef tacos. The rice and beans are coming along nicely as well. Talk to you later.

At that point almost everything seemed funny.

As far as Project Runway goes I'll see if my wife wants to do it. She's more a My Space girl. She had a bad message board experience over at the Shark Tank-AKA IMDb. But I think she'd be game for it. And yes, after watching all these seasons of PR I have developed an eye for fashion. Which is funny because I'm a former punk rocker and my fashion sense use to not extend to more than Dickies, Band Tees, Docs, Safety Pins and Chucks. In fact I'm wearing my Venom logo T-shirt and Dickies cargo shorts as I type this. But now, when I find myself in a clothing store with Jo I can look at something and realize "That's Hideous!"
