You and Simon are confusing me. a) Lilli, got it right with Harold, but not Hung. cool.gif Simon, got it right with Both Harold and Hung. c)Lilli & Simon - got it right with Harold and Hung. A+B=C?

Okay let me clarify. I love me some Harold, obviously. I rooted for Hung all the way through S3. The judges did make the right decision there as well but, the decision of Harold being chosen just seems unarguable for almost everyone in my opinion. I believe that all viewers agree with that decision hands down above all others. I may be wrong, but it's only an opinion.

I was musing last night over this season and nothing really seems to have changed for me from some of my original comments.

The challenges were less than exciting for the most part. I have to agree that while team challenges are important there were far too many of them for me this year. This seemed to make it all the more difficult for me to get a good sense of individual cooking styles until later on in the season.

There seemed to be nobody who I was seriously rooting for with the win. I felt no real affinity for any of them except perhaps Stephanie mid to late season. There was nobody that I truly all out could not stand either. I just didn't see a Stephen or a Marcel for me this year though Richard comes close he just doesn't carry Marcel's arrogance.

Many of the episodes simply fell flat for me. I wasn't seeing cooking at the level where I was saying to myself ''wow I really want to try that dish'' save once; the shrimp and pickled chili dish for MoW sans the bacon as I don't eat pork.

My thoughts on this playing the game thing which so many think Spike did so well. Every season we see those who say they are there to play the game and also show some fairly mean cooking skills. If one is going to ''play the game'' then it seems to me that you play the game to win, not be sent home for using frozen scallops.

I simply didn't feel as involved this season and I have the previous three. From my perspective, the entire thing was fairly dull. It seems this year that we got to see a great deal less cooking and the ins and outs of how and why dishes were done. I also think a poor job was done in engaging the viewer. It all fell flat for me and I'd have to say that, for me, this has most likely been the most boring of the four TC seasons.

We shall see what happens tonight though when Richard speaks. I have an awful feeling that it has been made to look worse than it actually is. Though for once I hope I am not wrong as it may be the most exciting moment of TC season four.

Lillian, I think most people felt good about Harold winning. The right chef. And a more popular personality. Same with Hung. Right chef, right talent, just not a cuddle wuddle lovey bear.

Season Two just kind of demonstrated that, in some situations, there won't be justice, won't be a popular remedy, won't be a satisfying outcome. Personally I felt there was no way to make that season end "right".

I agree with that. Was it me or was the caliber of talent not as high in S2 as others?

Who would you like to see win this season? In your own opinion, for whatever reason, do you really agree that if Lisa won it would be justifiable? Would it tick you off a little or would you not care at all?

Lillian, on a few occasions boarders have noted the average ages of the cheftestants in any given season.

For whatever reason, S2 had a crew of chefs that were (I think) something like 6.5 years younger on average than S3. It was something like that.

Well, that's not a huge age difference among people in their 50s. But among young chefs, who may have graduated from a culinary academy in their early 20s, worked only a few years... there would be pretty sizable differences in skill and experience and maturity between someone 24 years old and someone 30 years old.

Not sure if "talent" is the way to describe the difference, if that's what it was. But skill and experience and maturity, all of which do come with age and years... that may have been the difference.

But it's also reasonable to question if the Magical Elves select the cast for their talent... select the cast for other things.

Exactly. And that guy, who came to be famously known as Johnny Fairplay made a career out of one Reality TV appearence. He also made it to the final 3(I think). Being the villian means you get to stick around.

I'd try Spike's food. Brugers and Shakes are all right with me. Plus he did play the "game" better than anyone ever on this show.

Simon,

Who would you like to see win this season? In your own opinion, for whatever reason, do you really agree that if Lisa won it would be justifiable? Would it tick you off a little or would you not care at all?

Well, if Lisa wins fair and square it wouldn't tick me off, no. Granted, I'd have to be convinced she won fair and square. If Lisa were to win on the merits of what she does in the finale, that would be justified, according to the rules. And I wouldn't be ticked off about it at all, no. The rules haven't changed.

But I'm not rooting for Lisa.

Reason One, I do not think Lisa is nearly as talented as Stephanie or Richard. I understand how Lisa got to the finals, and I'm not going to complain about it... but I don't see her as the same caliber of chef as the other two. And I think the errors that Lisa has made are probably more serious than those of Stephanie or Richard.

Reason Two, I'm rooting for Stephanie. For reasons unrelated to any Judge's Criteria. I like her. She seems quite gracious. I am still bowled over by the dish she made in the first challenge, her version of Duck a l'Orange. I suspect she's more talented than she's sometimes shown, mostly because she does sometimes struggle with the (unrealistic) pressure.

I also think that a win here might be a bigger boost for Stephie's professional career than it would be for Richard. Who doesn't seem to need any boosting, he's doing quite well. I do respect Richard, much the same way Antonia does in a recent interview. He's extremely clever and cerebral and quick.

But I'm rooting for Stephanie. And if she does win fair and square, meaning that a woman wins fair and square, that will be fantastic. That will be something nice to see.

Maeby, I know nothing of Puerto Rican food but... Daisy Martinez seems to *always* says tostone (singular) and tostones (plural). Heaven knows I have watched her make them often enough and I assure you that is what she says. Is it possible the language simply has some variety to it?

I am also familiar with Daisy Martinez doing the two-step fry with tostones... first fry, then smash with a kitchen mallet, then second fry. Would a restaurant kitchen, however, do it another way? Using what looks exactly like a "Tostone Smasher" to squash them, then giving them just a single long fry to get them crispy?

Simon,
My grandfather was in the restaurant business and a staple of his menu was eggrolls. His eggrolls were always crunchy on the outside. He would deep fry them until the skins were barely turning from white to brown and then he let them cool in the yard behind the restaurant and then put them in the refrigerator. When ordered by a customer they would be put in the deep fryer again and would come out crispy. I have to think the crispy factor is similar to the two-step fry that you described.

Anyone could learn in the amount of time he's had since the end of the second season. Everyone has their own varying opinions about it.

As for season 2,I still think Sam should have won but if he couldnt,my second choice Ilan deserved the win.

Rocco got his celebrity before he did his "reality tv time." When Ruth Reichl gave his restaurant only 2 stars in a review, she was deluged with mail claiming he was robbed.

As for Spike, it depends on what the game is. Screw over the other contestants? He did that supremely well. Cook something worth eating? That was a little more spotty.

I"m guessing that the Richard speech, which seems to result in a shocked reaction from the judges, might be him going off on Lisa after he has displayed so much equanimity up to that point. I think the Elves were giving us foreshadowing with the sudden inclusion of Richard's confessional comments about Lisa in the last episode.

I'm expecting a full-tilt anti-Lisa rant from Richard tonight, but who knows? Only the participants and the Magical Elves.

Kristl, it is all connected... and the damage being done to the oceans and estuaries, and to what lives there, is just the tip of the iceberg. It's damage that's being done to the entire planet.

There's a vast section of the Pacific that is now a Dead Zone, and a deadly zone for any creatures who seek to feed there, because the surface of the water is 6 inches deep with tiny particulates of plastic. From plastic bags, other plastic products. All just plastic floating in the water and not breaking down.

And there was some recent research that showed that, even in the "healthiest" and "most productive" ocean fisheries, the fish stocks there are not even 10% of what our very recent "ancestors" saw. Recent as in, up until Industrial Fishing Fleets took to the seas after World War II. That's in what's left of the "productive" fisheries. The Grand Banks, that's gone. And the Flemish Cap followed it. The Grand Banks may have been depleted to the point that it doesn't ever recover.

But as I said... Colicchio actually commented this season that chefs shouldn't have served Chilean Sea Bass. BRAVO didn't show us that, but one of the guest judges revealed it. So maybe... Can one imagine a season of Top Chef that actually avoided not just veal, but avoids threatened and endangered species? GeezLouise! Someone, alert Pamela Anderson!

I know a few seem to think the chefs,at least from season 2,are not as talented as previous seasons. Others have said how terrible the chefs are because of errors they make.

To me,thats what the show is about. I dont want established chefs like Bourdain or Ripert on the show as contestants.

My NCAA analogy says it the best,IMO.

You have your mom and pop chefs who are like high school leagues. Then you have sous chefs, line cooks, exectutive chefs from restaurants with no stars to maybe one or two stars and these guys/gals are the NCAA of the culinary world.

Then you have the big boys/gals. The 3-4-5 star chefs who have worked a lifetime to establish careers. Who have paid their dues and earned the right to be a tyrannical douchebag in their kitchen. These are the pros.

The NCAA chefs want to go pro. They work long shifts for crappy pay and make many mistakes but they learn from those mistakes. They want to go to the next level so they are willing to pay their dues. Thats the kind of chef that should be on Top Chef.

I dont mind chefs on the show who spill things or burn something. I dont mind the ones who cook something that looks terrible and I wouldnt feed it to my dog. I dont mind the ones who are workhorses in the kitchen but might not be as proficient when it comes to the actual cooking. They want to learn and become the best and are willing to put the time in.

At least, this is how I see it.

Sorry to use this reply feature as a request for help but my computer is acting crazy on the Bravo boards today. Instead of showing everything in normal time posting sequence it's showing up as "threaded" replies by topic. I know there are over 100 pages using the normal sequence and in this mode there are only 25 and is very confusing. I've tried everything I know to bring it back to the normal display -- to no avail.

Could someone please help me? The only way I can be sure to receive your reply is if you PM it to me. At least that feature is unchanged in my computer.

I just wanted to write a little note about Lisa, because her comment at the very end of this episode warranted my immediate registration to this blog so I can "congratulate" her. Congratulations on having a terrible attitude, not only with the judges, but with your fellow contestants. In reviewing these episodes post-production, you must be so proud of how you carried yourself. Congratulations on being such a phenomenal coward in your attempts to throw others under the bus in a desperate measure to save yourself. Congratulations on never properly seasoning any of your dishes; your talent abounds. Congratulations on being on the bottom so many times, and yet you still evade elimination. Congratulations on winning 1 elimination challenge; it was so exceptional, I don't even remember what you won for, and in fact, I thought you had never won a challenge at all. Congratulations on being so perfect, you have not once admitted a mistake at judges table, and you have also repeatedly told the judges you thought they were wrong in their opinions of your consistently terrible meals. Are you judging next season, and when is the release of your cookbook? Oh that's right, you are only as good as the delusions of grandeur you harbor in your own, largely inflated, egomaniacal head. Congratulations on actually getting an entire cast of Top Chef to dislike you. Now that is a feat. And by the way, let me clear this up for you: the reason that Richard and Stephanie didn't congratulate you was because they believe, like so many others, you don't deserve it. Next time someone fails to say hello to you, congratulate you, or address you in any way, you can safely assume it's because they don't like you either. You robbed Antonia of a place in the final three. Not only do I question the judges, but the executive producers of this show. I have been a loyal fan, but this is the last straw. Allowing someone with so little couth and professionalism to contunue on this show is a testament to how much ratings matter. Congratulations again, Lisa!

1 large tub peanut butter, melted

(feel free to add..... biggrin.gif )

Well, specify that those are scales from large carp. A scale with some real texture and "mouth feel."

And the peanut butter is from Sav-a-Lot. For the family of four, under $10.

This blurb from Harold should put to rest what the producers cast for.

Before he auditioned, Harold Dieterle was a bit naïve about all this. He recalls his first e-mail exchange with Randy Bernstein, the casting director of Top Chef. “He was like, open call is this day,” says Harold, as he portions a pinkish heap of snapper in his new kitchen. “And I was like, open call? I’m not going to an open call. I’m a chef, man.” He told Bernstein he’d cook him a meal at the Harrison instead. “Afterwards,” says Harold, “he said, ‘Listen, you seem kind of normal. You’ve got to show your personality. It’s the most important thing.’ ” He stops cutting mid-fish. “So I’ll be honest with you: I absolutely, positively played the game. Before my final audition, I got totally overcaffeinated and was a total egomaniac. I told them no one can cook as good as me.”

It's not about the food.

I think Richard wins and say since he won he's going to give Steph the car. That's when Gail says "I don't believe he said that" or something to that effect. ph34r.gif CT#2

smile.gif Wow..if that happens, then Richard will be a SUPER good sport...and his wife, too.
